Sausage Stuffing (not low carb)

Ingredients
  •  4 tbsp. of butter
  • 1/4 cup fresh parsley 
  • 1 cup chopped onion 
  • 2 cups chopped celery

  • Kosher salt to taste

  • fresh ground black pepper

  • 2 tsp poultry seasoning

  • cloves garlic, minced

  • 4 cups of cornbread croutons

  • 4 cups of seasoned croutons
  • eggs

  • 3-4 cups 

    low-sodium chicken broth

  • 2 packages breakfast sausage links (cooked, crumbled or chopped)
Instructions

Saute garlic, onion and celery in some butter. In a small bowl add seasoning to the eggs and whisk. In a large bowl add breadcrumbs, egg mixture, melted butter, garlic, onion, celery and sausage. Add half the chicken broth and save the other half for later if the stuffing is too dry after baking. Bake for 30 minutes in a covered baking dish at 350. Make sure to butter the pan ahead of time to prevent sticking or burning. Uncover and bake for an additional 15 minutes or until it's golden brown and crunchy on top. You can add a couple of pats of butter to the top of the stuffing for browning.
