Cheesy Bacon Cauliflower


Recipe 

Ingredients
  • One cauliflower head
  • 1 cup of shredded sharp cheddar cheese
  • 6 strips of cooked bacon
  • 2 ounces cream cheese (room temperature)
  • 1/2 cup heavy cream
  • 1 ounce of light olive oil (not virgin)

Break up cauliflower in small pieces
Rinse the cauliflower in a colander
In a frying pan heat up the oil
Place the wet cauliflower in the hot frying pan and mix around to coat with oil (add more oil if necessary)
Lower to medium/high heat and cover for a few minutes
The idea is to steam and fry the cauliflower in the same pan
Take off the lid, mix the cauliflower and then splash another ounce of water in the pan
Replace the lid
The cauliflower will begin to soften and brown
Place the cream cheese in the center of the pan with the cauliflower and add the heavy cream to the mixture.
Mix well with a spatula
Add the cheddar cheese and mix well
Remove from stove and add the bacon pieces
